- In a bowl, whisk eggs, milk, salt, and pepper until frothy.
- Heat butter in a skillet over medium heat. Pour in egg mixture. Cook, stirring gently, until eggs are just set but still moist (about 3-4 minutes). Remove from heat immediately.
- Split English muffins and toast lightly in the same skillet (or over the campfire later).
- Assemble sandwiches: bottom muffin, 1 slice cheese, 2 slices bacon or 1 sausage patty, 1/4 of the scrambled eggs, optional spinach or peppers, top muffin. Press gently.
- Wrap each sandwich tightly in a double layer of heavy-duty foil. Press flat to compact slightly.
- Place wrapped sandwiches in a cooler with an ice pack. They keep cold for up to 24 hours.
- At camp: Place foil-wrapped sandwich on a camp stove grate, grill, or over medium coals. Heat 5 minutes per side (10 minutes total). Unwrap carefully—steam is hot. Serve immediately.
Notes
Food Safety: Keep sandwiches below 40°F in a cooler until cooking. Reheat to an internal temperature of 165°F. For egg safety, cook eggs to 160°F before assembling. Allergens: Contains eggs, dairy, gluten. Use dairy-free cheese and gluten-free buns for allergies. Vegan option: use tofu scramble (1 block crumbled tofu, 1/4 tsp turmeric, 1/4 tsp black salt, cooked in oil) and vegan sausage. Keto option: skip the muffin, wrap eggs and fillings in lettuce or serve in a bowl. Storage: Can be frozen for up to 1 month; thaw in cooler overnight before the trip.
