Ingredients
  

  • 12 large eggs
  • 1/4 cup milk or water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter or oil
  • 1 pound breakfast sausage or chorizo for spice
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas 10-inch
  • 1 cup prepared salsa optional, for serving
  • Hot sauce optional, for serving

Method
 

  1. In a large bowl, whisk together eggs, milk, salt, and pepper until frothy.
  2. In a large skillet over medium heat, cook sausage, breaking it into small crumbles, until browned and cooked through (160°F internal). Drain excess fat and set aside.
  3. In the same skillet, melt butter over medium-low heat. Pour in egg mixture and cook, stirring gently with a spatula, until eggs are just set but still soft (about 4-5 minutes). Remove from heat immediately—they’ll finish cooking when reheated.
  4. Lay tortillas flat. Divide scrambled eggs evenly among them, about 1/2 cup each. Top each with 2-3 tablespoons cooked sausage and a generous sprinkle of cheese.
  5. Fold in the sides of each tortilla, then roll tightly from the bottom, tucking in the filling as you go. Wrap each burrito snugly in heavy-duty foil, twisting the ends to seal.
  6. Place foil-wrapped burritos in a zip-top bag and store in the cooler with ice packs for up to 2 days.
  7. At camp: Heat a cast iron skillet or grill grate over medium coals or camp stove. Place foil-wrapped burritos in the skillet, turning occasionally, for 8-10 minutes until heated through (center should reach 165°F). Unwrap carefully—steam will escape.
  8. Serve with salsa and hot sauce if desired.

Notes

Food safety: Keep burritos cold (below 40°F) in the cooler until ready to reheat. Eat within 2 days of prep. For longer trips, freeze them at home and thaw in the cooler overnight. Reheat to 165°F internal temp. To adapt for a campfire, place foil packets directly on hot coals for 5-7 minutes per side. Common allergen note: contains eggs, dairy, and gluten. For dairy-free, skip cheese or use vegan shreds; for gluten-free, use corn tortillas (wrap in damp paper towel then foil to keep pliable).
